In a vacuum, the frozen ice turns directly into vapour (a process called sublimation), removing almost all the water without using heat without any nutrient loss.

Freeze-drying is a process where fruit is frozen solid and then placed under vacuum, which causes the water inside to go straight from ice to vapour without ever passing through a liquid stage. Because there's no heat involved, the fruit doesn't cook or caramelise the way it does in sun-drying or oven-drying which means the flavour stays sharp and true to the fresh fruit, and up to 98% of the water is removed while the nutrients stay largely intact. Regular "dried fruit" you find in stores is usually heat-dried or sun-dried, which is why it tends to be chewy, darker, and sweeter-tasting (often because sugar is added to compensate for what heat breaks down). Freeze-dried fruit, by contrast, is light, crunchy, and closer to eating the fresh fruit in a different texture.

Our fruit is sourced, processed, and packed in India, and every batch goes through the same freeze-drying process, no shortcuts between batches or flavours hence all fruits have distinct taste and flavour due to its natural procurement.

Not quite. Most commercial fruit chips are either fried (vacuum-fried) or dehydrated with added sugar/oil to help with texture and shelf life. Freeze-drying doesn't use heat, oil, or added sugar — the crunch comes purely from the water being removed, not from frying.

Largely, yes. Because freeze-drying doesn't involve heat, most of the vitamins and nutrients that would normally break down under heat-based drying methods stay intact. The main thing that changes is water content and portion size. Since the water's gone, you're eating a more concentrated version of the fruit, so a small handful actually reflects a meaningful amount of the original fruit.

No. that's part of the point. It's shelf-stable at room temperature as long as it stays sealed and dry. No fridge required, which is what makes it a genuinely travel-friendly snack.

That usually means it's picked up some moisture from the air. reseal it properly and store it somewhere drier going forward. It's still safe to eat, just won't have the same crisp crunch.
